But there’s more to this olive oil than just great flavor. Dr. Sears' rigid controls and special processing techniques preserve the quality and antioxidant properties of this delightful olive oil. While fish oil is rich in hmuch needed omega-3 fatty acids, olive oil is rich in hard to get omega-9 fatty acids.
But olive oil also has omega-3 and omega-6 fatty acids, and these cannot be produced by our own bodies. Omega-3 fatty acids, found in oily fish like salmon, are superb supporters of cardiovascular health. This makes olive oil a great asset to the body's immune system and to its heart.

The olives used in Dr. Sears Extra-Virgin Olive Oil are processed under the mildest conditions so as to prevent the oxidation of their powerful hydrophobic anti-oxidants, and then packaged under nitrogen to preserve oil quality.
The special tinted bottle prvents damage to the oil from the sun. Zone Labs is committed to your welfare and "evidence-based wellness" goals, so as to provide you with an extra virgin olive oil of the highest possible quality. Fiest of all, the leaves are sucked away with air fans, and the olives are washed with circulating potable water to remove every impurity.
This cold-pressing technique is used for the extraction of our organic extra virgin olive oils. The olives are then crushed in a mill. This releases the oil from the cells of the olive without heating the paste. A side shutter allows the mixed olive paste to be discharged and applied to round mats, which are stacked and placed under the head of a hydraulic press frame that applies downward pressure and extracts the oil.
The first pressing yields thebest quality oil, while subsequent pressings produce a lesser quality oil. Our olive oils are derived from the first pressing exclusively.
The olive oil is then pumped into a separator so as to separate the oil from the water and smaller particles. At this time the temperature must be maintained between sixteen and twenty-eight degrees Celsius so as to prevent thermal deterioration of the oil.
The end result is a cold- pressed, extra-virgin olive oil with ultra high quality standards combined with organoleptic characteristics, which give the oil its health-protective as well as aromatic properties.
To help ensure the highest of quality before our olive oil is added to our customer list, samples are mailed to olive oil experts for evaluation. All of our olive oils have received superb remarks by all who have tasted them, and the "fruitiness" of our olive oil is a material mark of their very high antioxidant value.
Our olive oils have achieved low acidity (defined by less than 0.8 percent) completely naturally, without the use of any chemical treatments whatsoever.
As an added quality control, our olives are crushed literally within hours of picking since storage of the olives triggers the fermentation processes.
